Our small production of organic extra virgin olive oil is produced following the synergistic organic method. Sant'Egle is located at 530 meters above sea level and for this reason the olive trees are not targeted by the famous fly which forces many farmers to use harmful products to kill it.
The harvest is done entirely by hand, without the use of shakers or mechanical means. The Sovana oil mill, certified organic, squeezes our olives using the cold method.
This year, poor in spontaneous rains and very hot, has given life to an oil with a less herbaceous and spicy taste. It is fluid, clear and with a delicate flavour.
Limited quantity, given by a less rich collection. Nature is like this, sometimes generous, sometimes less. This is why it should be appreciated and respected.
Packaged in cans of mixed colors (black, green and silver)

In collaboration with the Sant'Agata farm, the organic honey of Sant'Egle was born.
A small production, as nature creates it, without forcing the bees, without the use of antibiotics and mechanical interventions.
Not microfiltered: Honey is filtered only to retain impurities, leaving the natural particles that compose it in the honey, one of which is pollen; Non-industrial: although human intervention is necessary from extraction to bottling, our products do not undergo industrial manufacturing processes (such as pasteurization, microfiltration, pumping at high revolutions, etc.) The result? a flavor you've never tried.

Beer of refined simplicity, with an intense green color, it has a fine and persistent foam. The scents are fresh and immediate, characterized by notes of citrus fruits and Mediterranean scrub flowers. The aroma of spirulina is absent but it contains all its properties thanks to the cold infusion (dry hopping), soft on the palate suitable for all occasions, it can happily accompany appetizers, first courses and seitan.

Production area
Maremma Toscana, near Montemerano (330m above sea level) close to the Terme di Saturnia where the areas dominated by the Maremma Toscana DOC Bianco and Morellino di Scansano, both Maremma wines, intersect.
Grapes and winemaking
Vinified in white with controlled fermentation, from grapes harvested in late August or early September. Grapes present: Trebbiano, Verdello, Malvasia, Sauvignon.
Organoleptic test
The result of the tasting at 7°C. he gave:
COLOR
clear, very pale straw yellow.
PERFUME
noticeably ethereal with a clear hint of unripe rennet apple.
TASTE
savoury, acidic and slightly fruity which is influenced by the types of Trebbiano grape from which it derives.

Our dear friend Serafino and his Acquaviva farm are located near Montemerano (330m above sea level) close to the Terme di Saturnia where the areas dominated by Morellino di Scansano and Maremma Toscana DOC Bianco intersect, both Maremma.
BLACK, Morellino di Scansano
Grapes and winemaking
From Sangiovese grapes (called Morellino in the area) and a small part of Malvasia nera and Alicante, the "Nero" is vinified in red with a stay of at least 10 days in contact with the skins.
Organoleptic test
The result of the tasting at 18°C. he gave:
COLOR
ruby red with violet reflections.
PERFUME
intense, vinous, remarkable recognition of fresh fruit salad with a prevalence of cherries.
TASTE
savory wine even in its youth; slightly tannic, it has good enveloping harmony and balance, the right aromatic persistence.
EVOLUTION
already ready, it will be able to express itself at its best in the 2/3 years after the harvest.
Gastronomic pairings
Its particular freshness makes it very eclectic. It is best served with red meats, light game, Maremma cuisine and medium-aged pecorino cheeses.

Grapes: Trebbiano 80%, Sauvignon 15%, Greco 5%

To a Trebbiano base are added portions of Sauvignon, Greco and other grapes from our vineyards of Sovana and Pitigliano and grapes purchased from friendly winegrowers.
The harvest and selection of the grapes is done manually. The crushed grapes undergo a maceration with the skins for about 12 hours. Fermentation takes place in steel at low temperature without adding yeasts. At the end of the fermentation the wine is left on the lees for about 2 months and then bottled.
It is a wine of a deep straw yellow colour, with fresh aromas of flowers and white fruits; dry, savory, full-bodied and persistent.

Cilegiolo from our vineyards of Sovana and Pitigliano. Vineyards partly old (35 years old) partly new (1995-2003), trained according to the guyot system with a layout that varies from 3,000 to 4,500 plants per hectare.
The grapes are harvested and selected manually. Fermentation takes place without the addition of yeasts and lasts, including maceration, between 15 and 20 days. Matures for a few months in steel. Clear ruby red colour, with a beautiful vivacity; the nose is intense and persistent with notes of mulberry and cherry, plum and a spicy touch of black pepper.
The taste is dry, warm tending towards soft thanks to unobtrusive tannins and a sustained and enveloping structure.

Grapes: Sangiovese 55%, Merlot 23%, Teroldego 15%, Ciliegiolo 7%

From our vineyards of Sovana and Pitigliano; partly old (35 years old) partly new; bred, the old double guyot system with 2500/3500 plants per hectare, the new spurred cordon and sapling with 6000 plants per hectare.
The grapes are harvested and selected by hand and vinified separately.

Fermentation takes place without the addition of yeasts and lasts, including maceration, between 25 and 30 days. The wines mature for 12 months, partly in barriques and partly in steel. Subsequently blended and bottled, the wine is marketed after a minimum of 6 months of aging in the bottle.
Ruby color, very consistent. The nose is broad: jam of small red fruits, cedar wood and black pepper combine to form the bouquet. In the mouth it is very warm and concentrated, soft, with sweet and round tannins; very long, but not heavy.

Consisting mainly of Sangiovese combined with the other red berried grapes of our Sovana vineyards, always in the Pitigliano and Sovana area. The soils are tuffaceous, quite loose, with low organic fertility but rich in minerals such as potassium and magnesium.
The grapes are harvested separately and selected manually. Fermentation takes place without the addition of yeasts and lasts, depending on the vintage and including maceration, between 15 and 20 days. Matures for a few months in steel.
Clear ruby red colour, with a beautiful vivacity; the nose is intense and persistent, with red fruits and plums. The taste is dry, warm but supported by a pleasant acidity; soft and enveloping tannins.

Saint Lawrence
Ciliegiolo Maremma Toscana Doc

The best selection of cherry grapes from a more than 50-year-old vineyard managed since 1994 with organic farming methods. The vineyard is located in front of the village of Pitigliano, in Maremma; in its 3.5 hectares there are about 8500 old plants trained on the guyot system with a density of 2500 plants ha; a part has been replanted with a density of 4800 plants per hectare, an attempt is also being made to fill the gaps with young plants made in the nursery with the cherry tree from that same vineyard. The plant is exposed to SE/NW, on medium-textured subacid tufa soil.
The harvest and selection of the grapes are manual, the fermentation takes place without the addition of yeasts, and the maceration lasts from 15 to 20 days. The wine ages for 18/30 months in 10 hl Slavonian oak barrels. San Lorenzo is put on the market after 12 months of aging in the bottle.
Deep ruby color, the consistency already denotes an important extract. On the nose the cherry dominates, but associated with black currants, spicy pepper, clove which then also reappear on the palate. In the mouth it is elegant, balanced and of good persistence; not a muscular wine, but one of great freshness and drinkability

From our vineyards in Sovana; this reserve is produced only in particularly favorable years. It is a wine still in the "definition" phase but the goal is to combine the tannic structure of the teroldego with the elegance and softness of the cherry. The result of this vintage is already very promising even if the wine needs a longer aging time in the bottle.
Vineyards planted between 1998 and 2003, trained on the Guyot system, with a planting density of around 4500 plants per hectare. Manual harvest of the grapes in crates, each grape is processed separately.
Fermentation takes place without the addition of yeasts and lasts, including maceration, between 25 and 30 days. The wines mature for 18/30 months in second passage wood.
