The wines of Sassotondo want to be an expression of this powerful and mysterious territory: the native vines and an environment that is in some respects extreme – with the tuff that emerges everywhere – produce fine and elegant wines, naturally concentrated, savory and spicy.

Grapes: Trebbiano 80%, Sauvignon 15%, Greco 5%

To a Trebbiano base are added portions of Sauvignon, Greco and other grapes from our vineyards of Sovana and Pitigliano and grapes purchased from friendly winegrowers.
The harvest and selection of the grapes is done manually. The crushed grapes undergo a maceration with the skins for about 12 hours. Fermentation takes place in steel at low temperature without adding yeasts. At the end of the fermentation the wine is left on the lees for about 2 months and then bottled.
It is a wine of a deep straw yellow colour, with fresh aromas of flowers and white fruits; dry, savory, full-bodied and persistent.
