The wines of Sassotondo want to be an expression of this powerful and mysterious territory: the native vines and an environment for certain extreme aspects - with the tuff that emerges everywhere - produce fine and elegant wines, naturally concentrated, sapid and spicy.
Grapes: Trebbiano 80%, Sauvignon 15%, Greek 5%
At a trebbiano base there are Sauvignon, Greek and other grapes from our Vineyards of Sovana and Pitigliano and grapes purchased from friends viticulturers.
The collection and selection of grapes occurs manually. The pressing undergoes a maceration with the skins of about 12 hours. Fermentation takes place in low temperature steel without adding yeasts. At the end of fermentation the wine is left on the yeasts for about 2 months and then bottled.
It is a colored straw yellow wine, with fresh fragrances of flowers and white fruits; Dry, sapid, good body and good persistence.
